GANESH CHATURTHI PRASAD IDEAS AND RECIPES

#1 MODAKS

  • For The Dough
    • 2 cups rice flour (tandalacha peth/chawal ka atta)
  • For The Filling
    • 1 ¼ cups grated jaggery (gur)
    • 2 cups freshly grated coconut (kislela ola naral)
    • 1 table spoon poppy seeds (khus-khus)
    • 1/2 table spoon cardamom (elaichi) powder
  • Other Ingredients
    • 1 table spoon ghee for kneading and greasing

Method:

  • For the dough
    • Boil 1¾ cups of water in a deep non-stick pan.
    • Place the rice flour in a deep bowl and add the boiled water gradually. Mix well using a spoon in the beginning and then knead into a soft and smooth dough.
    • Cover with a lid and keep aside for 10 minutes.
  • For the filling
    • Heat a deep non-stick pan, add the jaggery and cook on a slow flame for 1 to 2 minutes or till the jaggery melts, while stirring continuously.
    • Add the coconut, poppy seeds and cardamom powder, mix well and cook on a slow flame for 4 to 5 minutes or till all the moisture evaporates and the mixture thickens. Keep aside to cool slightly.
    • Divide the filling into 21 equal portions and keep aside.
  • How to proceed
    • Knead the dough once again using ½ tsp of ghee and keep aside.
    • Take a portion of the dough, press it to make it flat as a small round puri
    • Place the filling in the center of the dough puri.
    • Close the dough puri from all sides such that the filling stays in between without tearing it apart.
    • Place a steamer plate in a steamer and place a banana leaf on it.
    • Moisten all the modaks with little water using your finger tips.
    • Place 10 modaks on the banana leaf and steam on a medium flame for 10 minutes.
    • Serve warm

ganesh-chaturthi-prasad-puran-poli#2 PURAN POLI

Ingredients:

  • ½ Kg Maida
  • ½ Kg Bengal Gram (Lentil)
  • 1 table spoon cardamom powder (elaichi)
  • 1 table spoon ghee
  • ½ Kg jaggery
  • 100 ml oil
  • Salt to taste

Method:

  • Wash and boil the lentil with water and 1/2 tsp salt till it becomes soft. Now coll it slightly and strain the dal using strainer
  • Now add cardamom powder and jaggery and grind to make fine paste. If the paste seems sticky, keep it on the fire to dry up completely
  • Knead 1/2 kg maida with water and 1/2 table spoon of salt. Avoid making it hard. Now add some oil and knead the maida again till oil gets absorbed.
  • Prepare equal number of balls from maida and the jaggery filling
  • Roll out maida balls to make small pooris and fill in the jaggery balls in it. Close out the maida pooris and roll them to make chapatis
  • Heat a griddle and roast each poli. Searve it hot with ghee and milk

Ingredients:

  • 1 cup fresh grated coconut
  • 1 ½ cup milk
  • ¼ cup sugar
  • ¼ table spoon cardamom powder
  • 1 table spoon ghee

Method:

  • Heat a tsp of ghee and fry the grated coconut slightly. Then add milk and cook on medium low until all the milk is absorbed. Keep stirring frequently to avoid the milk from getting burnt. You can use condensed milk also instead of milk. (in that case, you can avoid sugar)
  • When all the milk is absorbed, add sugar. The mixture gets a little diluted once you add sugar.
  • Keep cooking on low flame for some more time until the mixture becomes sticky and you are able to make balls out of it. The mixture will also leave the sides of the pan.
  • Once it cools slightly, grease your hands with a little ghee and make even sized balls out of it. Delicious Coconut laddu is ready. You can engage your kids also in making these balls. Ensure that the mixture is warm before allowing them to shape laddus.

ganesh-chaturthi-prasad-besan-laddu#4 BESAN LADDU

Ingredients:

  • 2 Cups Ghee
  • 4 Cups Besan (Gram Flour)
  • ½ Teaspoon Cardamom Powder
  • 2 Cups Powdered Sugar
  • 10-15 Almonds

Method:

  • Heat ghee in a pan and add cardamom powder to it
  • Add besan and roast till a nice smell comes from the mixture (approximately 10 mins)
  • Now transfer the roasted besan into a bowl
  • Crush the almonds and add it to the roasted besan
  • Allow the mixture to cool and then add the powdered sugar and mix
  • Roll into even sized ladoos

Ingredients:

  • 3 table spoons of Ghee
  • 6-7 Cashews
  • ½ tablespoon raisins
  • ½ cup rava/sooji
  • 1 cup boiling water
  • 1/3 cup sugar
  • 1 medium banana mashed
  • ¼ tablespoon cardamom powder

Method:

  • First mash the banana using fork. I like to taste the banana flavor in each every bite, so I mashed them. But if you want to then you can chop them or slice them.
  • In one pan heat the water on medium heat and let it come to a boil. Meanwhile start making sheera.
  • Heat the ghee in another pan on medium heat. Once hot add broken cashews and raisins. Fry them till cashews are golden brown and raisins are plumped up. Remove it in a bowl
  • Add sooji to the ghee. And roast it with stirring continuously on medium-low heat. It will take about 6-8 minutes. It becomes vey light brown in color. Make sure to roast on medium-low heat with stirring continuously.
  • Add boiling water. Use one hand to stir as you add water. By doing this you will get smooth sheera, otherwise you find some lumps as you dump all the water in the sooji.
  • Cook with stirring constantly till mixture becomes dry. dd sugar and mashed banana. Mix well and again sheera becomes runny as sugar melts. Keep stirring.
  • Now cook till sheera leaves the sides of the pan and you will see some ghee oozing out from the sheera. This time sheera is cooked and turn off the stove.
  • Add cashews, raisins and cardamom powder. Mix well and banana sheera is ready to serve.
